Savory Soto Ayam: A Step-by-Step Guide to Indonesia’s Beloved Chicken Soup

    • In the same pot, add lemongrass, kaffir lime leaves, bay leaves, and galangal to the chicken broth. Simmer for 30 minutes to infuse the flavors.
  4. Sauté the Spice Paste:

    • Heat the cooking oil in a pan over medium heat. Add the spice paste and sauté until fragrant, about 2-3 minutes.
  5. Combine and Simmer:

    • Add the sautéed spice paste to the broth. Season with salt and sugar. Simmer for an additional 20 minutes.
  6. Assemble the Soto Ayam:

    • Place a portion of rice or rice noodles in a bowl. Add the shredded chicken and pour the hot broth over it. Garnish with hard-boiled eggs, chopped celery, fried shallots, and a squeeze of lime juice.
